For dinner, try a hand-cut steak seared to perfection and, if you wish, topped with green chile gorgonzola or Southwest onion strings. Chile, chipotle and habanero peppers make frequent appearances on the menu, which add a signature Southwest flavor and pair harmoniously with bold wines from Argentina, Chile and Portugal and a variety of tequilas.
